Saucepan Brownies

1/2 c. butter
1 tsp. vanilla
6-12 oz. semisweet chocolate chips (1-2 c.)
3 eggs
1 1/4 c. Sucanat or 1/2 c. + 2 Tbsp. honey
1/2 tsp. baking powder
1 1/4 c. hard white flour
1/2 tsp. mineral salt
OPT: 1 c. chopped nuts

Heat oven to 350°. Spray 13 x 9 " pan with PAM. Heat butter with 1 c. chocolate chips in a 3 quart saucepan over low heat, stirring often until melted. Stir in Sucanat (honey), and eggs. Then add flour, vanilla, baking powder and salt. Stir until smooth. Spread in non-stick sprayed pan and sprinkle with chips ( and nuts) if desired. Bake until center is set, about 20-25 minutes. Cool completely to cutting. To quote a friend, "These are to die for brownies!" (And SO easy!)
