Mediterranean Turkey Pizza

A really great recipe and a wonderful way to sneak in some veggies for the beginning conversion of the family to healthier eating. This is one of the most incredibly flavorful pizzas I’ve ever eaten. It is fairly easy to make and is SO worth the effort. If you’ve never considered pizza as company food, consider this one! My children and their friends are crazy about it!

1 Tbsp. olive oil
1/4 c. snipped dried tomatoes
1 lb. chicken or turkey, diced*
1 Tbsp. fresh basil
4 or 5 cloves garlic, minced
1 Tbsp. fresh oregano
1 medium Vidalia® onion, chunked
1 1/2 c. shredded raw milk Colby
1 medium zucchini, shredded
1 can black olives, drained/sliced
1 medium yellow squash, shredded Salt to taste
4 medium roma tomatoes
1 large pizza dough

In a large skillet over medium high heat, heat olive oil and sauté chicken, garlic and onion for 3 or 4 minutes, until onion is soft. Add zucchini and squash and cook until tender-crisp. Stir in romas, dried tomatoes, basil, oregano and salt to taste. Remove from heat. Preheat oven to 375º. Sprinkle pizza with half of the cheese and top with chicken mixture. Sprinkle remaining cheese and the olives over the top. Bake for 10 minutes or until cheese melts. Makes 4 main dish servings
*ground chicken or turkey may also be used.
